Almond Butter

This is one of the easiest recipes in existence, if you can even call it that. The humble almond has impressed me quite a lot lately, from making almond milk the other day, to butter now, its amazing how versatile it can be. This recipe could just as easily be made with any other type of nut too, I would think.

Ingredients: Almonds. (2-3 cups should do the trick).

Directions: Roast almonds in the oven (optional). Blend almonds in food processor until they turn into butter.

The key is to have faith that the almonds will, in fact, turn into butter. When you first put them into the food processor, they will just turn into a fine nut powder, and you might lose hope, or get the urge to add some sort of liquid to help it along. If you wait, and resist all these urges, you will soon find that slowly and surely, this powder will begin to clump up a bit.. then a lot. The oils in the nuts will slowly release, and before you know it (or about 10-12 minutes), you’ve got butter on your hands.

You could add a pinch of sea salt at the end, or cinnamon or cocoa powder or something like that. I just left it as is, and then packaged it up all pretty to give away as a Christmas present.
