Beans, Greens and Sweet Potatoes

For the past week (or actually more like few months) my diet has consisted largely of 3 basic ingredients: sweet potatoes, black beans and kale. Each of these items cost roughly a dollar each at the grocery store (sadly even cheaper then fruit loops), tastes delicious (if you prepare them correctly), and will score you lots of points if you care about your health or the earth.

To make:

Peel and dice a large sweet potato (or butternut squash). Toss with olive oil, salt & pepper and nutmeg, and roast in the oven till soft.

In the meantime, slice and caramelize half an onion. Add in a drained can of black beans. Season with salt, pepper, cumin and cinnamon. Toss in a whole bunch of thinly sliced kale (or other green), and let it wilt. Add in the roasted sweet potato/squash.

Once you have this ^^ basic down, keep it in your fridge a few days and use it as a base for a lot of easy and cheap meals. Here’s what I made this week:

^ Tacos. Just toasted a couple small whole wheat tortillas, and added the mix along with a little cheese and greek yogurt.

^ Eggs. Just scramble some regular eggs, and throw everything else in to warm up.

^ Rice. Boil some rice. Toss in the mix. (and now it’s turned into this).
