Sweet Potato, Sausage & Kale Rice

The latest edition of some sort of Grain + some sort of Vegetable + some sort of Protein all mixed together in a bowl. Exhibit AExhibit B. Not to mention a multitude of other mixtures that never see the glowing blue light of the internet. In other words –> my go-to meal when I’m starving/ don’t know what to make/need to empty the fridge of on-the-verge-of-mould produce.

First off boil some rice.

Then peel, dice and roast a sweet potato in the oven with a little olive oil and salt and pepper.

In the meantime, sautee a diced onion and some minced garlic. Slice up some sausage (I had some leftover honey garlic sausage from a particularly delicious appetizer that will be shared at a later date) and add that in too. Once everything’s just about cooked, throw in some chopped kale and let it wilt.

Then mix everything together.

A little bit sweet, a little bit salty, and a little bit green.
