Coronation Summer Salad

This is what happens when you drop by your family’s home, perhaps around dinnertime, only to find them walking out the door to their own, better (?) dinner. You raid the garden and leftovers in the fridge, and assemble as so:

A bed of lettuce from the garden, and an assortment of chopped pecans, cherries and avocados. I then put together a quick coronation salad- this is typically a kind of curried chicken salad, originally prepared for the Queen’s coronation in 1953. To make, mix together the following:

– about half a breast of chopped chicken
– 1 rib of diced celery
– small handful of dried cranberries
– tablespoon or 2 mayonnaise (sub greek yogurt for some or all)
– juice of half a lemon
– squeeze of honey
– good pinch of curry powder
– salt and pepper to taste

Mix it all together, and the sauce from the chicken salad will suffice as a salad dressing as well.
